With ANZAC day coming up, these are everywhere & easy to cook. The story behind them is that women in WW1 made them to send to the troops as they were one of the few recipes that would keep.

1 cup plain flour 1 cup rolled oats 1 cup brown sugar 1/2 cup coconut 125 g butter 2 tbs golden syrup 1 tbs water 1/2 tsp bicarbonate of soda
Sift the flour into a bowl. Add the sugar, rolled oats and coconut.
STEP 2 Melt the butter in a saucepan and add the golden syrup and water.
STEP 3 Stir the bicarbonate of soda into the liquid mixture.
STEP 4 Add the liquid to the dry ingredients and mix thoroughly.
STEP 5 Place walnut-sized balls of mixture on a greased tray and bake at 175C for 15-20 minutes.
STEP 6 Biscuits will harden when cool
The consensus seems to be if you have a fan forced oven, lower temp to 160c & cook about 14 mins.

She's a judge on Australia's greatest bake off. I love these cooking shows like My Kitchen Rules and BakeOff but there is no way I could ever go on them. I am just an average cook & the stress some of these teams go through is unbelievable.
But Maggie's biscuit recipe is easy enough. A bit unconventional though. Lemon zest in an Anzac? Sacrilege!!
