It looks nice but I doubt I would be able to find the ingredients for it. Or not easily. Where on earth do you get bacon drippings? My mum used to save fat from roasts and cooked meat but you would have to cook an awful lot of bacon to accumulate almost a cup of drippings. I don't know what Andouille sausage is, although we do have lots of different types of sausages here so maybe something else could be substituted. There may be gumbo file powder in specialty shops, I will look in the supermarket international section next time I am there. I've never seen cans of stewed tomatoes on sale either. We have whole tomatoes, diced, crushed, mixed with herbs etc but I haven't seen stewed.

The glory of google. I just found this site and this recipe. www.herbies.com.au/shop/herbs-and-spices/herbs/gumbo-file-powder-sassafras-leaf-10g/It seems to have been adapted for aussie shoppers. Cast your eyes down the ingredients and imagine it made, would it taste fairly authentic do you think? It has a teaspoon vegetable oil rather than a cup of bacon dripping & tomato puree and fresh tomato instead of stewed but otherwise seems to have fairly similar ingredients.

Meant to add, probably part of the reason I am not experienced in seafood cooking is that some people in my family have strong seafood allergies. My sister gets ill even with tuna etc and I have an aunt who ends up in hospital if any shellfish is even waved over her food. Mum & dad never ate shellfish-mum was a good cook but very conventional, very British as people were back in the 1950s/60s. Meat & 3 veg back in those days. Roast lamb or beef. Cutlets. That sort of thing. They would eat conventional fish & chips. In fact that was the only take away available back in those days. Dad loved a bit of King Whiting. I still recall when mum went into hospital to have my sister & I stayed with an aunt. She opened a tin of spaghetti & that was the first time I ever saw the stuff. Last time too till several years later when a friend's mum made the real thing. I think my dad would have rather starved than eaten Italian or any foreign food. Set in their ways, they were. Australia is a different country now of course.
PS I felt sure I would be able to find gumbo on ebay. No such luck. It made me smile. The system asked me if I meant gumboots or bumbo. I typed in gumbo file and there are some recipe books (from USA) but no spices that I can see. I'm now on a mission to see if I can find it at the supermarket although may have better luck with the local Dandenong market although that has a large Indian/middle eastern population & their spices are a bit different.

$1.39 against $5.70 at Herbie's but I guess I would buy from herbie's if I wanted it as local postage would make it cheaper. Herbie's looked to have some interesting spices.

No gumbo in coles supermarket that I could see today. They have whole aisles of Mediterranean, European & specialised Asian ingredients but southern American probably isn't big here. I will look at the market but as I said, that is heavily middle eastern/Indian.
