This may sound a little weird, but it works very well.
Tomatoes are a pain to peel, and the skin can take away a lot from the recipe, thus the easiest way I have found to peel them is very, very simple.
Collect the tomatoes you want to use in your recipe, put them in the freezer and freeze them......at least 24 hours. Take them out and at the sink hold them in your hand under warm to hot water, the skin will peel off with one swipe of your fingers. After they are peeled, thaw the tomatoes and use them in your recipe. Works great with no knife scabs to the tomatoes. The freezing will have no effect on the quality of the tomatoes.
I always keep a half a dozen tomatoes in my freezer to use in sauces, soups and pasta sauces.

Good tip there. I don't often have to peel tomatoes but it is a pain.
